Shakshoka in Egypt

It is an egyptian  recipe. Have you ever tried it?  I read about it. it is shakshoka al-betengan. As we know albetengan is the eggplant.

you cut the eggplant ( the betengan ) into small pieces and put in a heated oil then  put the tomato sauce then the pieces of the felfel ( the green pepper). then mix well. put some water to be well-cooked. then put the recipe inside the stove to  redden the surface of the recipe.
